6 EGGS (I REALLY LIKE BLUE SKY FARMS CAGE FREE EGGS)
2 TBSP OF ORGANIC MAYONNAISE
3 TBSP OF ORGANIC HONEY MUSTARD
2 TBSP OF SWEET PICKLE RELISH
1 CELERY STALK DICED
Prep by boiling water in a medium sauce pan.
Once you have a roiling boil, turn heat to medium. Using a soup spoon or ladle carefully place eggs in water.
Boil for 6 mins.
Turn off heat and let sit 2 more mins.
Place entire pot with eggs in sink and run cold water over them until the pot and water is very cold.
Let sit in cold water or transfer to fridge until you are ready for next steps. If you are ready give them 5 mins to cool (it’s easier to peel the shell off when they are fully cooled).
Peel eggs, chop and place in medium bowl.
Add mayo, honey mustard, pickle relish and diced celery.
Stir gently to combine.
Place on leaf of lettuce, bread, wrap etc… and enjoy!
